THE ORIGIN

WHERE IT ALL BEGAN

Urban Mill started at a home kitchen counter with a small grain mill and a question: how did something as foundational as flour become an ingredient we rarely stop to think about? What began as Jessica’s personal exploration of grain, fresh milling, baking, and pasta making quickly became something larger. The more she learned, the clearer the disconnect became between the grain itself, the way flour is produced and stored, and the way most of us experience it at home. That curiosity became the foundation for Urban Mill.OUR PURPOSEFresh-milled flour should not feel like a specialty product reserved for a small group of people. Urban Mill is being built to make fresh milling, practical grain knowledge, and quality grain-based foods more accessible to households, food businesses, and local markets.Access is part of that purpose, especially in urban neighborhoods and historically underserved areas where fresh, high-quality ingredients may be harder to find.THE VISIONUrban Mill is bringing an old craft into a modern context. Through fresh-milled flours, approachable pantry staples, and practical education, we are building a Houston-based mill designed to serve the way people cook, bake, and make food today. What started at a kitchen counter is becoming something much bigger: a modern mill built around quality, access, and a closer connection to the food on our tables.
